an experiment

I am many things to many people however the role which I feel is at times the most important one of all is that of carrot cake connoisseur - yup that's me, I can't drive through a country town without checking out whats it's bakery has on offer and be sure I can direct you to all the best nearby offerings. 

And today I had a little experiment in making my own, you see the best of the best is not your typical type of carrot cake but more of a meringue like carrot cake with the cream cheese frosting in the middle and with a dusting of icing sugar on top. Unfortunately it seems that the recipe for this highly addictive cake is a closely guarded secret as I can't seem to find it anywhere which led to the need for experiment, and although it was rather dense, at places a little chewy and with plenty of room for development, it actually wasn't too bad. Together with a couple of coffees and two fabulous friends it indeed helped to make a perfect morning.
